Our Philosophy

Spiritual Meanings and Rituals of the Table

A meal should be a deeply personal and spiritual experience with the chef, that enriches the mind, body and soul through the essence of ingredients and the rituals of the table. Chef Emmanuel’s spirituality is expressed through yoga and vegetarianism and his general outlook on life. His beliefs and philosophies breathe life into Saint Pierre and shape its character.

The rituals of the table is an essential part of dining, be it in Europe or Asia. It encompasses etiquette, customs and social observance in a reflection of respect for the food and the chef. At Saint Pierre, ritual is paramount. It is warm and inclusive, enhanced by service that is personal and attentive but never obtrusive, ensuring a truly unique and unforgettable experience – a simply divine celebration of dining.

The Global Influence

At the heart of Saint Pierre lies essence-centric cuisine, the advanced extraction of concentrated, vital essences from the freshest natural ingredients to season dishes through the use of modern techniques and methods.

Only the finest seasonal ingredients from a global larder are paired with the spices and flavour balances of the region. The result is a refined and elegant contemporary gastronomic cuisine, a harmony of flavour with the perfect amount of richness.

The Pursuit of Wellness

Good food should not only delight the senses but nurture the body as well. Saint Pierre features a strong vegetarian focus that embraces dietary limitations. Incorporated into the menu are dishes that have been specially prepared, mindful of food restrictions, but without compromise or diminution to taste and flavour. It is a giving and inclusive approach, and speaks of an open, accepting heart.

The Preservation of the Future

The magic of the Saint Pierre experience is for everyone, even the little ones. Saint Pierre is uniquely child-friendly; in fact, we encourage children to dine with their families. A special chef’s table, seating only children and featuring a specially created children’s menu, will receive the personal attention of Chef Emmanuel himself, who will serve and educate the little diners on food and the age-old rituals of the table. Through such measures, it is hoped a new generation will emerge which cherishes the rituals of dining, and perceives food as an art that brings pleasure, joy, companionship, closeness of family, and richness to one’s life.

Beyond that, we emphasize sustainability in all our policies and practices. It is important to us to leave behind a better world for the next generation.

Sharing with Heart and Soul

Cooking and service at Saint Pierre comes from the heart. It stems from a genuine desire to create perfect, unforgettable experiences for our guests. A reduction in the number of tables allows us to devote more attention to what is important – you. The personal distance between chef and diner has been reduced, to create a new intimacy at Saint Pierre. Chef Emmanuel is personally in attendance whenever possible, and when he is unavailable, the restaurant closes or a special guest chef does the honours in the kitchen. We value the relationship our guests have with the chef; something not afforded by many luxury restaurants.
