ELEVATING VEGETARIAN FINE DINING TO A FRENCH CULINARY ART FORM
Our ‘Elegance’ vegetarian menu presents a sublime interplay of flavours, colours and textures underpinned by meticulous ingredient sourcing. This isn’t merely vegetarian fine dining but an exciting exploration of each ingredient and its origin. Guided by the diverse experiences of Chef-Owner Emmanuel Stroobant as a practising vegetarian for over a decade, he crafts the Elegance menu with a high level of understanding and sophistication.
The seven-course vegetarian fine dining menu encapsulates our singular philosophy of embracing fresh, in-season ingredients. Vegetables and plant-forward ingredients take centre stage, emphasising the beauty of eating with the cycles of nature.
The experience begins with an Amuse Bouche featuring smoked beetroot, akita mountain tonburi and wasabi. This is followed by a Brittany Purple Artichoke with black truffle and fig leaf. Get a taste of Loire Valley White Asparagus enhanced with celeriac purée, lemongrass vin jaune emulsion and garnished with smoky egg yolk and toasted brioche.
For dessert, choose between the refreshing Miyazaki Mango or the Manjari Chocolate dessert – the latter is a nostalgic nod to Chef Emmanuel’s favourite childhood treat, chocolate-raspberry macaron.

Our culinary team coaxes out the best flavours and aromas from each ingredient, celebrating vegetarian cuisine in its most refined form. A choice selection of non-alcoholic beverage is also available to complement the cuisine.
